Vegan Salvadorian-Inspired Pupusas

These Salvadorian-inspired pupusas are so easy to make, so delicious and so easy to batch make.


Ingredients (makes 10-12 pupusas):

  • 2 cups masa harina
  • 1 tsp salt
  • 1.5 cups water (may need more)
  • Filling of choice (I used refried beans, sauteed mushrooms and spinach and Follow Your Heart parmesan cheese)


Directions:

  1. Mix together masa and salt in large bowl.
  2. Add water gradually, you may need to get your hands a bit messy to make sure everything is mixed well. You want the dough to be wet, but still moldable (like a wet sand consistency).
  3. Form 1-2″ balls of dough and place on an oiled cutting board.
  4. Lightly oil your hands to avoid sticking to the dough and flatten balls into discs.
  5. Add about 1 Tbsp of each filling item into center of disc.
  6. Cup hand with disc to curl the edges of the dough.
  7. Cover filling with edges of the dough and ensure all filling is covered by filling.
  8. Gently flatten semi-ball to reform into a disc and cover any remaining filling with excess dough on the edges.
  9. Heat a caste iron skillet or comal on medium heat, brush lightly with oil.
  10. Cook each side of the pupusa for 5 minutes or until lightly browned.
