These Salvadorian-inspired pupusas are so easy to make, so delicious and so easy to batch make.
Ingredients (makes 10-12 pupusas):
- 2 cups masa harina
- 1 tsp salt
- 1.5 cups water (may need more)
- Filling of choice (I used refried beans, sauteed mushrooms and spinach and Follow Your Heart parmesan cheese)
Directions:
- Mix together masa and salt in large bowl.
- Add water gradually, you may need to get your hands a bit messy to make sure everything is mixed well. You want the dough to be wet, but still moldable (like a wet sand consistency).
- Form 1-2″ balls of dough and place on an oiled cutting board.
- Lightly oil your hands to avoid sticking to the dough and flatten balls into discs.
- Add about 1 Tbsp of each filling item into center of disc.
- Cup hand with disc to curl the edges of the dough.
- Cover filling with edges of the dough and ensure all filling is covered by filling.
- Gently flatten semi-ball to reform into a disc and cover any remaining filling with excess dough on the edges.
- Heat a caste iron skillet or comal on medium heat, brush lightly with oil.
- Cook each side of the pupusa for 5 minutes or until lightly browned.
